Ingredients
- 1 kg chicken pieces
- 200 g all-purpose flour
- 100 g cornstarch
- 2 eggs, beaten
- 200 ml milk or buttermilk
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp paprika or chili powder
- 1 tsp garlic powder
- Oil for deep frying
Cooking Time
30–40 minutes total (prep 15, cook 25).
Instructions
- Marinate chicken with salt, pepper, and buttermilk for 30 minutes.
- Combine flour, cornstarch, paprika/chili, garlic powder, and a pinch of salt.
- Dip chicken in beaten eggs, then coat thoroughly in the flour mixture.
- Heat oil to 170°C. Fry 12–15 minutes (depending on size) until golden and cooked through (internal temp 75°C).
- Drain on a rack, rest 3 minutes. Serve hot with your favorite sauce.
